Today is the birthday of Abraham Lincoln, the 16th President of the US of A. His favorite pie was Lemon Custard Pie (or was it Pecan?), which bears a striking resemblance to our Lemon Meringue Pie. If you want to try it out, here is the recipe from the Milwaukee Journal in 1913:
“Two-thirds of a cup of water, one teacup of sugar, the yolks of three or four eggs; grated rind and juice of one lemon; one tablespoonful of cornstarch; fill a pie shell and bake in a hot oven.
Beat up the whites of eggs separately to a stiff froth, mix in three tablespoonfuls of sugar and spread over pie. Bake to a nice brown.”
